This February, Heritage and Harvest Supper celebrates the enduring traditions of the American South through the lens of Willamette Valley terroir. From Gullah Geechee Hoppin’ John fritters to sorghum-caramelized Oregon pears, each course bridges Gulf Coast heritage and Pacific Northwest bounty. Our plant-forward philosophy honors Winter Green Farm greens and local orchards, while optional Dungeness crab and Afton Field duck showcase regional excellence. We invite you to experience the soulful intersections of Southern culinary tradition and Pacific Northwest abundance. This five-course family-style dinner tells a story of migration, adaptation, and the persistent memory of ancestral foodways.

We begin with a Gullah Geechee Hoppin’ John Fritter—crispy medallions of Carolina Gold rice and sea island field peas, kissed with fermented pepper vinegar aioli—honoring the Lowcountry New Year’s tradition of prosperity, brought forward to our winter table. The first course deepens this narrative with Potlikker Soup, the sacred liquor of slow-simmered greens from Winter Green Farm in Noti, enriched with smoked ham hock.

Our second course bridges the Gulf and the Pacific: golden hush puppies arrive with optional fresh Dungeness crab from Chelsea Rose Seafood, accompanied by a delicate savory sabayon—a French technique applied to Southern ingredients. The entrée offers a choice: a plant-forward Collard Green Roulade embracing earthy mushroom duxelles, or Pan-Seared Duck Breast from Afton Field Farm, its crisp skin yielding to rose-pink flesh beneath a blackberry gastrique made from preserved summer fruit.

We conclude with Sorghum Pear Upside-Down Cake, featuring local winter pears caramelized in sorghum syrup, that ancient Southern sweetener—a fitting tribute to the Southern table’s enduring sweetness. Each course reflects my belief that the laboratory and the kitchen share the same pursuit: understanding transformation at the molecular level while honoring the soul of tradition.
